Every loaf of sourdough at ASVYBE begins with the same living organism: a wild mother starter culture we have tended twice a day since our kitchen doors first opened.
Unlike commercial dry baker's yeast that aggressively forces dough to rise in under 90 minutes, a wild levain works gently over 36 continuous hours. During this prolonged fermentation, lactic acid bacteria break down complex starches and gluten proteins, unlocking nuanced wheaty aromas and natural digestibility.
Every morning at 5:00 AM, the starter is fed equal proportions of organic stoneground whole-wheat flour, dark rye, and pure filtered water maintained at exactly 24°C. By early afternoon, the dome peaks into a frothy, sweet-and-sour sponge ready to leaven tomorrow's crusty boules.
The result isn't just bread — it is an edible expression of time, ambient microbial ecology, and patience that no commercial shortcut can ever replicate.
